Here's what we've got planned for dinners this week...
Monday
Enchiladas
Tuesday
Breakfast
(Scrambled Eggs, Hash Browns, Sausage, Bacon)
Wednesday
Chicken Soup and a bread item (Kids choice - muffins probably)
(using chicken breasts and the frozen noodles and a bag of mixed veggies)
Thursday
The Bear's Birthday - turning 14
She's requested Pizza... not sure if we're making Homemade, frozen, or what. She likes them ALL. She's not a cake girl, so probably either cheesecake or blueberry muffins... Again it's up to her. She loves to cook alone, and with me...
Friday
Shepherd's Pie
(hormel pre-cooked beef roast in gravy, bag of peas, bag of corn, mashed potatoes) with Biscuits
Saturday
CHILI!

Hey Mom... What's for Dinner?
This is the first time I've posted my menu plan on the blog... To tell the truth, I usually do a monthly menu and post it on the fridge... That way I don't have to ever answer the question... Hey mom, what's for dinner? S0 here's what we've got goin on this week in the cheapsk8 house:
Menu Plan
Monday
French Onion Soup w/Parmesan
Grilled Roast Beef & Cheese Sandwich
Tuesday
Pot Roast w/Potatoes & Carrots
Bread Machine Bread
Wednesday
Chili (i love my crockpot)
Thursday
Macaroni Grill's Creamy Basil Pasta Dinner Kit
Corn (or peas)
Meat (typically chicken, shrimp, or fish)
Friday
Tacos (still using those Taco Bell ones from Meijer)
Spicy Corn (1 tsp of chipotle pepper puree + 2tb of margarine)
Spanish Rice
Saturday
Spaghetti
Garlic Bread (using leftover Bread)
Corn (or peas)
Sunday
Baked Potato Bar
(this week we're going to use up a few cans of the Hormel Chili we accumulated @ the Kroger)
And any leftovers the kids might wanna have
I've got a family with kids ages ranging from 9 to 15, and a husband who is not only gorgeous, he's an eater. I'm no stranger to the dinner myself :) Since the husband can't have vitamin K (in large amounts) you will notice a huge lack of green leafy stuff in the diet... We find out soon if that's a permanent medical diet issue in a few more weeks...
My kids might be picky about some of the things we serve, but since they're older... it's a LOT easier for me to get them to eat. Usually it goes something like this:
Kid: "Mom, I don't like this stuff."
Me: "Really? I thought you were hungry."
Kid: "I'm full."
Me: "Ok kiddo... dump it out. But don't bother asking about South Beach Bars or Yogurt or anything else for a snack tonight."
Kid" "Ok, I'll eat it."
That would NEVER work on them before they became capable (husband would not agree with this point) of logical thought.
